Chapter 20: Rum

Plantation Original Dark (BB)

Alcohol: 40%

Aroma:  Starts with toffee, roasted almonds and the memory of pralines and chocolate.

Taste:  Soft and oily on the tongue. Lots of tropical fruit notes and vanilla. These transition into a dry spiciness with notes of oak and dried fruit.

Finish:  Long-lasting and spicy sweet with a mix of fruit, vanilla and oak.

The Plantation Original Dark Rum comes from Barbados and is blended there from various distillates, which were initially stored in ex-bourbon barrels. Like most Plantation rums, the Original Dark is also developed using a double-aging process. After storage in ex-bourbon barrels, the wine is stored a second time in former cognac barrels in the Ferrand cellars in France. The result is a complex and intense rum with aromas of toffee and roasted almonds as well as memories of chocolate pralines. The taste shows notes of dried fruits as well as spicy, sweet oak, vanilla and tropical fruits.

Remedy Spiced Rum (BB)

Alcohol: 41.5%

Aroma:  Fruity with oranges and figs. Plus vanilla and sweet oak.

Taste:  Sweet and spicy on the tongue. Start again with oranges. There are also spices such as cinnamon and pepper as well as some licorice.

Finish:  Medium long and spicy sweet with pepper, cinnamon, vanilla and orange.

The Remedy Spiced Rum is sold by the German importer Sierra Madre and is a blend of various Caribbean distillates. This includes Barbados, Trinidad and Tobago and the Dominican Republic. The recipe for the creation dates back to the Prohibition era. At that time, the pharmacist F. Farrington sold the rum under the counter. The aroma shows fruity and spicy aromas. The taste shows oranges, cinnamon and vanilla. Accompanied by pepper and liquorice.

Legendario Ron Anejo 9 y/o (CU)

Alcohol: 40%

Legendario Anejo 9 Años Rum 40% is a premium Cuban rum distinguished by its exceptional aging and complex aromas. It matures for at least nine years in barrels, which imparts a deep and balanced flavor profile. This rum is often praised for its smoothness and complexity, making it an elegant and luxurious drink.

Aroma:

The rum exudes an intense aroma of caramel, vanilla and dried fruits, accompanied by a hint of oak and spices.

Taste:

The palate reveals a rich blend of soft, sweet notes of toffee and chocolate, rounded off by a light fruitiness (dried fruits such as raisins and prunes). Aging in oak barrels adds further complex, woody, and spicy accents. The finish is long and harmonious, with a pleasant warmth and a hint of vanilla.

Koloa Kauai Dark Hawaiian Rum (HW)

Ron Zacapa 23 Sistema Solera (GT)

Alcohol: 40%

Aroma: Sweet fruit notes of raisins and dark grapes. Plus vanilla, caramel and honey.

Taste: Soft and smooth on the tongue. The sweetness becomes deeper with the taste of nougat, caramel and again dried fruits. Behind it is dark chocolate.

Finish: Long lasting and oily sweet. Chocolate and some oak finish it off.

Would you like a top-selling rum that, surprisingly, does not come from an island in the Caribbean? Then you’ve come to the right place with the Ron Zacapa Centenario brand. It is responsible for high-quality, fascinating rum from Guatemala in South America, which is produced in a very special way. Interestingly, the tasty Ron Zacapa Sistema Solera 23 is not made from molasses, but from “virgin sugar cane honey”, a type of sugar cane honey. After distillation, the sophisticated storage takes place using the solera system. In the solera process, inspired by Spanish sherry, the contents of different barrels are mixed several times during maturation so that young and old distillates are blended together. Such a blend with the number 23 indicates that the oldest components were allowed to mature for over two decades, while the other parts are significantly younger. The Ron Zacapa Centenario 23 Years also benefits from the fact that the resting phase takes place in various oak barrels at an altitude of over 2,000m in rock caves under special climatic conditions.
