Democrata Mezcal Artesanal (MX)
Alcohol: 48.1%
This mezcal, made from 9-year-old Espadin agave , was created by the producer of our exclusive Sacapalabras Mezcal Ancestral with the intention that everyone should be able to afford great mezcal. The Espadin agave variety matures relatively quickly, can be cultivated under controlled conditions, and also grows quite large compared to some of wild varieties used for the Sacapalabras Mezcal Ancestral.
The production method is traditional: the agave is roasted or baked directly in the ground, then ground by a donkey-powered stone mill, fermented along with its juice and fibers in wooden barrels with wild yeasts, before the mash is distilled in a copper pot still. The less rigorous use of technology required in the Ancestral production process allows for the creation of a no less excellent quality at a truly affordable price.
A delight both on its own and impressive in special cocktails. The aroma and taste initially reveal a pronounced smoky note, accompanied by a sweet, fruity impression, before the vegetal character of the agave develops with a light minerality.
