Topanito Espadin (MX)

Topanito Mezcal Artesanal is made from the Espadín agave variety and is produced at the Amantes de lo Ajeno distillery in Mexico’s Oaxaca state. The agave are harvested after at least seven years of growth and their hearts (piñas) are roasted in pits for five to eight days. This intense roast gives artisanal mezcal its distinctive, smoky, earthy character. The roasted agave hearts are crushed and ground in a donkey-powered mill. After adding water, the mash ferments for three to five days in open wooden and stone vats using wild yeasts. After the double distillation of the agave wine, Topanito Mezcal Artesanal Blanco 40% is brought down to its drinking strength of 40% with spring water.
The nose is dominated by notes of green peppers, lemon thyme, eucalyptus and roasted agave. Coriander seeds, pink grapefruit and pomelo are noticeable in the background. A grassy, fresh and light taste of green mango, hay and juniper convinces in the mouth. The mezcal says goodbye with notes of juniper and coriander.
